Equipment
- 1 Cast-iron pan
- 1 Sharp knife
- 1 Choche
- 1 Spatula
- 1 Tongs
- 1 Small bowl for the Gilly Sauce
Ingredients
- 3/4 lb 80/20 grass-fed ground beef
- 1 large ripe beefsteak tomato I like it cut thick
- 1/2 med yellow onion sliced medium thin
- 2 slices extra sharp cheddar cheese I like Tillamook
- 5 slices dill pickles – per burger I like Mt. Olive Kosher dill chips
- 2 sets Brioche bun (soft and buttery) I like St. Pierre
- 1 tsp organic Mayonnaise I like Trader Joe's
- 1 tsp dijon or yellow mustard I like Beaver dijon
- 2 tsp ketchup – organic, no sugar
Gilly Sauce
- 1 tbsp organic mayonnaise
- 1 tbsp organic sugar-free ketchup
- 1/2 tsp Dijon or yellow mustard
- 1 splash Worcestershire sauce
- 1 tsp pickled jalapeño or dill pickle – if desired chopped fine
Instructions
- Take your meat out of the refrigerator and let it come to room temperature for 15 minutes.
- Gather your ingredients.

- Slice your onion, tomato, and cheese. Wash and dry some good pieces of lettuce, and mix your sauce.

- Heat your skillet over medium-high heat, then add a little olive oil.
- Add onion slices to the skillet and cook, turning occasionally, until they are translucent.

- Form your patties larger than your bun, as they will shrink when cooked.
- Salt and pepper your patties, then top one side with a bit of mustard.

- Cook the patties for about 2 minutes per side, then add the cheese on top and cover with the cloche to help it melt.

- Add onions on top, then layer with pickle slices, tomato, and lettuce.
- Add the buns to the pan, cut-side down, with a little mayo on them, and crisp for a few seconds. Remove, then spread sauce on both sides, build your burger, and enjoy immediately!
