Take your meat out of the refrigerator and let it come to room temperature for 15 minutes.
Gather your ingredients.
Slice your onion, tomato, and cheese. Wash and dry some good pieces of lettuce, and mix your sauce.
Heat your skillet over medium-high heat, then add a little olive oil.
Add onion slices to the skillet and cook, turning occasionally, until they are translucent.
Form your patties larger than your bun, as they will shrink when cooked.
Salt and pepper your patties, then top one side with a bit of mustard.
Cook the patties for about 2 minutes per side, then add the cheese on top and cover with the cloche to help it melt.
Add onions on top, then layer with pickle slices, tomato, and lettuce.
Add the buns to the pan, cut-side down, with a little mayo on them, and crisp for a few seconds. Remove, then spread sauce on both sides, build your burger, and enjoy immediately!
