Simple Homemade Bacon and Egg Muffin With Cheese
Taking a page from McDonald's playbook, this simple yet satisfying breakfast should excite and satiate adults and children alike. Substitute sausage, croissant, or scrambled egg if you prefer.
Equipment
- 1 Toaster
- 1 Skillet
- 1 Tongs
- 1 Cheese grater
- 1 Spatula
Ingredients
- 6 strips bacon
- 1/4 cup grated cheese extra sharp cheddar
- 2 large organic eggs
- 2 English muffins cut in half
- 1 tsp mayonnaise if desired – not needed
Instructions
- Grate your cheese.
- Cook your bacon until crispy, turning often on medium heat. Set aside on a paper towel. (drain almost all grease from the pan).
- Cut your English muffins and start toasting.
- Crack two eggs gently into the bacon pan, and cook on med-low heat for about one minute per side. Flip gently, salt and pepper each side.
- Remove eggs from heat. Build the breakfast sandwich starting with egg on the bottom. Use mayo if desired. Serve with juice or hot coffee and enjoy!
