Best Ever Chicken and Mushroom Pasta Alfredo
Enjoy this cozy and delicious homemade creamy mushroom Alfredo, enriched with tender roast chicken. It's quick to prepare, hearty, and incredibly satisfying—definitely a wonderful comfort food to indulge in!
Equipment
- 1 Large Skillet
- 1 Large pot
- 1 Tongs
- 1 Colander or pasta claw
- 1 Garlic Press or sharp knife
Ingredients
- 12 ounces pasta linguini or orecchiette
- 3/4 stick butter
- 1 pound wild mushrooms clean, sliced thin
- 1 chicken breast sliced into pieces I use organic rotisserie chicken from my favorite market
- 3-4 cloves garlic chopped fine
- 1/4 teaspoon red pepper flakes if desired for a little kick
- 1 teaspoon salt
- ½ teaspoon freshly ground pepper
- 1 pint heavy cream
- 2 cups good parmigiano/reggiano cheese grated fine
- 1 tsp finely chopped parsley for garnish
Instructions
- Bring a large pot of salted water to a boil over high heat.
- Meanwhile, in a large sauté pan,
- On medium heat, add half the butter, then add the mushrooms. Cook until they become soft. Add the garlic and red pepper flakes, S & P.
- Add pieces of rotisserie chicken.

- Add the pasta and cook for 12 minutes, or until al dente.
- When you add the pasta, your mushrooms should be cooked. Add the heavy cream – over medium heat; bring briefly to a boil, then reduce to a simmer. Add the cheese little by little, stirring occasionally until the sauce thickens enough to coat the back of a spoon, usually done when the pasta is ready.

- Adjust the seasoning to taste.
- When the pasta is ready, add a ladle of pasta water to the sauce, drain the pasta, and add it to the pan with the Alfredo.

- Gently toss together over low heat, garnish, and serve immediately.

Notes
Plate and add parsley or thyme to garnish, divide among four plates, and serve immediately.
REHEATING INSTRUCTIONS:
To reheat your leftovers, place them in a small saucepan and heat over medium-low heat. Once it starts to warm, add a splash of milk or cream. Stir well with a wooden spoon and increase the heat to medium. Let it simmer, but be careful not to let it boil.
