Amazing Linguine With Shrimp Scampi

Keep in mind that half a dish’s ability to WOW is about the quality of your ingredients. To that end, I suggest you always use the highest quality, freshest, and most organic ingredients you can find.
For this recipe, I use all fresh vegetables, double zero Italian pasta (no preservatives or sugar – just wheat and water), and fresh shrimp. Whole Foods has all these things – including the pasta and a choice of fresh shrimp.
The organic Italian pasta that I love is, Rustichella d’abruzzo – Pasta Abruzzese di semola di grano duro.

Enjoy!

Equipment

  • 1 Large pot
  • 1 large saucepan
  • 1 Wooden spoon or spatula
  • 1 Tongs
  • 1 knife

Ingredients

  • 3/4 pound linguine or tagliatele
  • 1 pound large fresh jumbo prawns about 16 shrimp, peeled and deveined
  • 5 tablespoons unsalted butter
  • 5 tablespoons good olive oil
  • 4 cloves of garlic
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • ½ teaspoon red pepper flakes
  • 1/3 cup chopped fresh parsley leaves
  • 1 lemon zest grated
  • 1 lemon fresh squeezed juice
  • 1/2 lemon thinly sliced
  • 1/3 cup white wine (If desired – I don't typically use it) chardonnay or pinot grigio

Instructions

  • Clean and devein the prawns.
  • Over high heat, bring a large pot of salted water to a boil.
  • Prep the ingredients for making the Scampi.
  • When the water boils, add your pasta and cook for 12 minutes or until al dente.
  • Meanwhile, in a 12-inch pan, melt the butter and olive oil over medium-low heat, and add the garlic. Sauté for 1 minute. Be careful, not to burn the garlic. Add the red pepper flakes, and wine.
  • Then add the shrimp, season with salt, and pepper, and cook for 2-3 minutes per side. After the first turn, add the lemon juice and zest.
  • When pasta is ready, drain and add it to the pan of shrimp,
  • Turn the heat to low while you toss to mix thoroughly.
  • Remove from the heat.
  • Plate immediately and top with parsley and lemon slices.
  • Enjoy!

Notes

You will either need to skin and de-vein your shrimp or buy it that way for this recipe (I will be making a video on how to de-vein a shrimp soon).
