Flavorful and Easy Artichoke Recipe
Easy to make, delicious to eat. Artichokes can be roasted, steamed, boiled, fried, or grilled. This healthy, tasty veggie is packed with protein, antioxidants, fiber, and only 73 calories per serving, including the dipping sauce. I usually boil my artichokes with spices, and a dipping sauce (not always grilled) because it is easier to prepare. Serve with a simple pasta or garlic toast for a lovely lunch or dinner without much effort.
Peak artichoke season is spring, but they can be harvested in summer and mid-autumn as well.
Artichokes were considered a delicacy and an aphrodisiac and a favorite among ancient Romans and Greeks. Ancient Greeks believed that Zeus transformed his beautiful lover Cynara into this prickly plant as punishment for deceiving him.

- To eat, pull off the leaves and eat the meaty bit at the end of the leaf with dipping sauce or melted butter. The heart is the best part. It is what's left after the leaves are pulled off.DO NOT eat the fine hairs surrounding the heart.
