Easy to make, delicious to eat. Artichokes can be roasted, steamed, boiled, fried, or grilled. This healthy, tasty veggie is packed with protein, antioxidants, fiber, and only 73 calories per serving, including the dipping sauce. I usually boil my artichokes with spices, and a dipping sauce (not always grilled) because it is easier to prepare. Serve with a simple pasta or garlic toast for a lovely lunch or dinner without much effort.Peak artichoke season is spring, but they can be harvested in summer and mid-autumn as well.
In a large pot with a lid, fill 3/4 full of water on high heat. Salt the water add olive oil, garlic cloves, and lemon wedges.
Cut the stems off (I do not cut the tips off). —Cook for 45 minutes to 1 hour (until the inside leaves pull out easily).
Grab artichokes upside down with tongs to let the liquid out.
If desired, cut in half, scoop out the fine hairs with a spoon - Brush with oil. Grill 5-8 minutes per side until grill marks show. (Top with lemon juice and grated parmesan cheese for extra flavor).
Serve with dipping sauce or melted butter.
To eat, pull off the leaves and eat the meaty bit at the end of the leaf with dipping sauce or melted butter. The heart is the best part. It is what's left after the leaves are pulled off.DO NOT eat the fine hairs surrounding the heart.
