Simple Foil-Wrapped Fish With Fresh Vegetables Camping-Style

Delicious fresh fish filets wrapped in foil, roasted with fresh-cut vegetables.
This Recipe is very healthy and simple to prepare. Foil Roasting is terrific for camping. The tomatoes and olive oil will keep this dish very moist. Wrap it completely in foil and cook on the grill for 30-40 minutes.
You can use salmon, halibut, swordfish, and almost any favorite vegetable, like summer squash, mushrooms, or asparagus. See my corn-on-the-cob camping recipe for a terrific side to this dish.

Equipment

  • 1 Cutting board
  • Sharp knife
  • Baster
  • Aluminum Foil
  • Tongs

Ingredients
  

  • 2 lbs fresh filets 4 pieces (I use Salmon)
  • 1 large zucchini sliced and quartered
  • 1/2 small red onion yellow or sweet onion ok too – sliced
  • 1 bell pepper yellow or orange – sliced
  • 2 vine ripe tomatoes cut into 1 inch pieces
  • 4 button mushrooms If desired
  • 4 tsp organic mayonnaise spread directly on fish
  • 3 tbsp olive oil drizzle on fish and vegetables
  • 1 tsp dill to taste
  • 1 tsp thyme to taste
  • salt & fresh pepper to taste

Instructions
 

  • Fish Note: Salmon, Halibut, or Swordfish are all suitable for this dish. 
  • Set fish out, and sprinkle with salt and pepper.
  • Slice your vegetables evenly.
  • On one large piece of heavy-duty foil for each piece of fish, sprinkle with dill and thyme, and spread mayo directly on the fish.
  • Add the sliced veggies to the dish and drizzle with oil and S&P.
  • Wrap the fish and vegetables tightly in foil and set on the grill.
  • After 15 minutes, check your fish. Open the foil to see if the vegetables are soft and the fish is cooked thoroughly.
  • Continue to check the fish every 10 minutes until done.
  • The salmon is ready when it looks flakey, not pink inside.
    NOTE: The salmon in the liquid won't dry out, but you must cook the vegetables until soft or al dente. 
  • Serve immediately! – I like this dish with corn on the cob when camping. (*see Recipe).

Notes

Foil Roasting is also terrific if you are camping. The juice from the tomatoes and the olive oil will keep it very moist. Wrap it completely in foil and cook on the grill for 30-40 minutes.I also use Summer squash, asparagus, and lemon or mushrooms.
It’s a good recipe for using your leftover vegetables.
