Ultimate Chicken and Mushroom Pasta Alfredo
Enjoy this cozy and delicious homemade creamy mushroom Alfredo, enhanced with tender roast chicken. It's quick to make, hearty, and so satisfying—truly a wonderful comfort food to indulge in!
Equipment
- 1 Large Skillet
- 1 Large pot
- 1 Sharp knife
- 1 Tongs
Ingredients
- 12 ounces pasta linguini or orecchiette
- 1/2 stick butter
- 1 pound wild mushrooms clean, sliced thin
- 1 chicken breast sliced into pieces I use organic rotisserie chicken from my favorite market
- 1 small shallot chopped fine (if desired, or add 1-2 more cloves of garlic instead)
- 2 cloves garlic chopped fine
- 2 teaspoons fresh thyme leaves
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 pint heavy cream
- 2 cups good parmesan cheese grated fine
- 1 tsp finely chopped parsley or thyme for garnish
Instructions
- Bring a large pot of salted water to a boil over high heat.
- Add the pasta and cook for 12 minutes or until al dente.
- Meanwhile, in a large sauté pan,
- On medium heat, add half the butter, then add the mushrooms and stir for approximately 4 minutes until they are soft.
- Add the garlic, the rest of the butter, and shallots, then add salt, pepper, and thyme. Stir until fragrant, about 2 minutes.
- Add pieces of rotisserie chicken.

- Add ½ & ½, increase the heat to high, bring to a boil briefly, then reduce to a simmer until the sauce thickens enough to coat the back of a spoon, about 5 minutes.

- Add Parmesan cheese and adjust the seasoning to taste.
- When the pasta is ready, drain it and add it to the pan with chicken and mushrooms Alfredo.

- Gently toss together over low heat, garnish, and serve immediately.
Notes
Plate and add parsley or thyme to garnish, divide among four plates, and serve immediately.
REHEATING INSTRUCTIONS:
To reheat your leftovers, place them in a small saucepan and heat over medium-low heat. Once it starts to warm, add a splash of milk or cream. Stir well with a wooden spoon and increase the heat to medium. Let it simmer, but be careful not to let it boil.
