Scrumptious Chicken and Mushroom Alfredo

When I think of comfort food, I think of this dish. It’s creamy and hearty with delicious ingredients. This is a lower-calorie variation of Emeril Lagasse’s Mushroom Orecchiette. He uses cream and no chicken; I’ve made a few other alterations.

COOKING NOTE:
If you cook your own chicken, you need to add more about an hour to the recipe—Marinade chicken breast in olive oil, garlic, S&P. Refrigerate for 30-60 minutes in a zip lock bag. Cook in the oven, uncovered at 350 degrees for approx. 23 minutes (or until 165 degrees in the center). Let rest for 10 minutes before slicing.
Enjoy!
