Equipment
- 1 9-inch springform nonstick cake pan
- 1 Hand mixer or standing mixer or mix by hand
- 1 Mixing bowl
- 1 Spatula
- 1 Small saucepan
Ingredients
- 10 full plums pitted
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1 stick butter soft
- 3 large eggs
- 1 1/2 tsp real vanilla extract
- 1 tbsp orange zest 1/2 large navel orange
- 1 cup cake flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Toppings
- vanilla ice cream or whipped cream to serve real and organic
Instructions
- Preheat oven to 350°F.
- Line the spring pan with parchment paper and butter the sides. Set aside.
- 1/2 the plums and gently remove the pits.
- Place plums at the bottom of the pan, cut-side down.
- In a small saucepan, add 1/2 cup sugar and 3 tbsp water. Cook over medium-high heat, stirring occasionally, until the sugar turns to a dark amber caramel. While hot, pour evenly over the plums and set aside.
- In a mixing bowl, beat in butter, 1/2 cup sugar, brown sugar, salt, vanilla, orange zest, and cinnamon. Beat in eggs one at a time. Slowly add cake flour and baking soda. Mix until light and fluffy.
- Spread batter evenly over the plums.
Bake:
- Bake for 30-35 minutes, until golden brown, and a knife when inserted comes out clean.

Cool and Flip:
- Let cool for 15 minutes. Run a knife around the edge of the pan.
- Carefully flip the cake onto a serving plate, gently peel off the parchment paper.
Serve:
- Serve with vanilla ice cream or whipped cream.
