Make the Perfect Filet Mignon

Equipment
- Cast iron skillet
- Tongs
- Large spoon
Ingredients
- 2 filets – filet mignon 6-8 oz. each
- 2 tbsp unsalted butter
- 2 tbsp olive oil or grapeseed oil, or other high-heat oil
- 1 clove garlic
- 2 tbsp pepper – cover all sides with fresh cracked pepper
Instructions
- Pat the filets dry with a towel and let sit at room temperature 20-30 minutes.
- Preheat the oven to 450 degrees F (230 C).
- Season filets on all sides with fresh cracked pepper.
- Chop garlic fine, mix with butter into a paste and set aside.
- Heat skillet over medium heat, add the oil.
- Using tongs, flip the filets, add the garlic butter on top of filets and add 2 rosemary sprigs for flavor.
- Tilt the pan, spooning the garlic butter over the top of the filets as they cook.
- Transfer filets in the skillet to the oven for 7 minutes (for medium rare).
- Transfer the steak to a cutting board (DO NOT CUT) for 10 minutes to 'rest' before serving.
- Serve with your favorite sides and enjoy!
Notes
After cooking, let filets rest for 10 minutes before cutting.
Letting the steaks ‘rest’ is extremely important. It allows the juices to form inside the steak and allows the steak continue to ‘cook’ to its full medium rare status.
