Flavorful and Simple Grass-Fed Ribeye Steak With Sautéed Mushrooms
Pan-seared grass-fed ribeye steak with olive oil and butter, finished in the oven, topped with mushrooms sautéed in garlic butter, and garnished with fresh parsley. Great with a baked potato on the side.
Equipment
- Cast iron skillet
- Tongs
- Large spoon
Ingredients
Steak
- 2 filets grass-fed ribeye steak 8 oz. each
- 3 tbsp butter
- 2 tbsp olive oil or grapeseed oil, or other high-heat oil
- 1/2 tsp Himalayan sea salt
- 2 tsp pepper cover all sides with fresh cracked pepper
Mushrooms
- 1 pound organic mushrooms-sliced cremini or portobello
- 3 tbsp butter or olive oil
- 2 cloves garlic
- 1/4 tsp Himalayan sea salt
- 1/2 tsp fresh cracked pepper
- 1 pinch thyme and oregano if desired
- 2 tbsp fresh parsley chopped fine
Instructions
Steak:
- Pat the filets dry with a towel and sit at room temperature for 20-30 minutes.
- Preheat the oven to 425 degrees F (220 C).
- Season filets on all sides with salt and fresh cracked pepper.
- Heat skillet over medium heat; add the butter and oil.
- Add filets immediately to the pan when the oil mixture sizzles with a drop of water.
- Cook for 2-3 minutes without moving (to form a slight crust).
- Using tongs, flip the steak for about one minute.
- Transfer filets in the skillet to the oven for 3 minutes (for medium rare).
- Move the steak to a cutting board (DO NOT CUT).
- Wait for 10 minutes to 'rest' before serving.
Meanwhile…
Mushrooms:
- Clean off the mushrooms with a cloth or paper towel – not water.
- Chop the garlic finely, mix with butter, and set aside.
- Heat a large pan or skillet at medium heat.
- Add the garlic butter mixture for one minute to let the garlic flavor begin to release (do not burn).
- Add the mushrooms to the pan, spread evenly – add spices – leave standing for 3 minutes without turning, then stir. Cook until soft and golden brown. It takes about 7-8 minutes in total.
Serving
- Plate the steak and top with the mushrooms.
- Garnish with fresh chopped parsley and serve with your favorite vegetable side.
Notes
Letting the steaks ‘rest’ is essential. It allows the juices to form inside the steak, enabling it to ‘cook’ to its full medium rare status.
