Equipment
- 1 Salad Bowl Large
- 1 Sharp knife
- 1 Cutting board
- 1 Salad dressing jar
Ingredients
Salad
- 2 hearts romaine lettuce sliced very fine.
- 4 stalks scallions chopped fine
- 2 sprigs fresh dill finely chopped (use more than you would think)
- 1/2 block Feta cheese (3 oz) crumbled, large chunks
- 1/2 cup Greek Kalamata olives (about 20) pitted
Dressing
- 1/6 cup good olive oil
- 1/6 cup red wine vinegar
- 1 splash balsamic vinegar (very little)
- 1 pinch salt & pepper
Instructions
- These are your main ingredients. All available at Trader Joe's.
- Clean the romaine, Slice fine, spin dry in salad spinner.
- Chop the scallions – discard tops and tails.
- Chop the dill fine. No stems.
- Crumble the feta into large chunks.
Notes
The salad doesn’t need salt or pepper because the olives are already salty. To add a burst of more dill flavor, add a pinch of dried dill to the fresh dill.
Making this salad is very straightforward. Trader Joe’s has everything you need. Build the salad and make the dressing. Chill in the refrigerator for 30 minutes before serving.
