Best Vibrant and Tasty Tacos
During my childhood, my mother often prepared these buffet-style tacos. They feature a delightful blend of flavors and a unique sauce. These tacos consist of corn tortillas cooked at home, ground beef, lettuce, tomato, red onion, shredded cheese, and tomato sauce. They are easy to make, and you probably have all the ingredients in your fridge. Indulge in this taco dish – not only is it simple, but it’s also a healthy, low-calorie option.
Best Vibrant and Tasty Tacos
These tacos consist of corn tortillas cooked at home, ground beef, lettuce, tomato, red onion, shredded cheese, and tomato sauce. They are easy to make, and you probably have all the ingredients in your fridge. Indulge in this taco dish – not only is it simple, but it's also a healthy, low-calorie option.
Equipment
- 1 Cast iron skillet
- 1 Sharp knife
- 1 Tongs
- 1 Large spoon
- 1 Can opener
Ingredients
- 8-12 fresh corn tortillas
- 6 tbsp vegetable oil
- 3/4 lb 80/20 fresh ground beef
- 1/2 tsp salt and pepper
- 1 package Taco Bell Original Seasoning Mix (highly-rated) Available at most grocery stores
- 1 large tomato chopped fine (no seeds)
- 1 cup lettuce romaine or iceberg – chopped fine
- 1/3 medium red onion chopped fine
- 1 cup cheese I like cheddar – shredded
- 1 tbsp cilantro if desired – chopped fine
- 1 6 oz can of high quality organic tomato sauce heated on the stove or in the microwave
Instructions
- Cook the tortillas one at a time in oil on high heat until they bubble. Lift out of the oil and gently shake off excess oil back into the pan. Then place the tortilla over a burner on medium-low heat until they get some crispy edges. Remove from the flame and put between 2 paper towels. Repeat until you have made about 8-12 tortillas, enough for 4 people.
- Cook your ground beef with salt, pepper, and seasonings until the meat has no visible pink. Drain the grease and set aside.
- Remember to "Mise en place" your taco ingredients by chopping and putting them into bowls so people can build their own tacos buffet-style.
- Heat the tomato sauce, (on the stove or microwave) and transfer to a bowl or small pitcher for serving.
- Build your tacos and enjoy! (I like meat on the bottom, and sauce on top).
Notes
Remember that you can always switch up the ingredients when making tacos. Some people prefer using chicken – an organic rotisserie chicken is a great option. Also, sour cream, hot sauces, avocado, or guacamole, and jalapeño can all be great additions.

- Taco Bell makes a highly-rated taco seasoning that you can buy in the grocery store.
