Simple, Really Juicy Baked Garlic Lemon Chicken

Simple, Really Juicy, Baked, Garlic Lemon Chicken
This delicious, simple dish will be a favorite of your guests and your family alike.
Equipment
- Pyrex dish (or other oven safe dish)
- Large mixing bowl
- 1 gallon ziplock bag
- Turkey baster
- Meat thermometer
Ingredients
- 2 large chicken breasts organic
Marinade
- 4 cloves garlic – chopped medium fine
- 1/6 cup olive oil
- 1 large lemon zest the entire lemon, use 1/2 lemon for juice and 1/2 lemon for slices
- 1 tsp fresh parsley chop fine or used dried
- 1 tsp fresh thyme chop fine or used dried
- 1 tsp fresh oregano chop fine or used dried
- 1 tsp honey
- 1/2 tsp sea salt
- 1/2 tsp fresh pepper
Optional
- 1 splash of white wine (over chicken when you put it in the oven)
- 1/2 tsp red pepper flakes (instead of thyme and oregano)
- 1/2 tsp rosemary (instead of thyme and oregano)
Instructions
Prep
- In a large mixing bowl prepare the marinade
- Place the chicken breasts in the bowl and coat in the marinade
- Transfer the chicken breasts and marinade into a one gallon ziplock bag
- Refridgerate for 2-8 hours
Cook
- Put chicken and marinade into a pyrex dish
- Place in an oven at 350 degrees for 25 minutes (until center temperature reaches 165 degrees)
- A couple of times as it's cooking use a turkey baster to moisten the meat
- Remove from the oven and let rest for 10 minutes before slicing
- Garnish with fresh parsley
- Serve with a veggie and a carb as a side dish (suggestions below)

If you prefer various flavors, you can swap the spices – like thyme and oregano for rosemary and red pepper flakes. Both ways are equally delicious.
