Gilly’s, Grandma’s New York Cheesecake
I tweaked my 86-year-old grandma’s NY Cheesecake recipe. My aunt (her daughter) wanted to test mine against New York City’s most famous cheesecake. She overnighted their best and said mine won the test.
The origin of NY Cheesecake: New Yorkers fell in love with cheesecakes back in the 1900s. The credit for creating the NY cheesecake has been bestowed to Arnold Reuben, also known for his signature sandwiches. The NY-styled cheesecake was an experiment Reuben did with a cheese pie. He brought it to a party – it did not go over well, so he perfected his recipe. Finally becoming the New York Cheesecake, we know today.

Equipment
- 10” Spring Mold Pie Pan
- Kitchenaid Mixer
Ingredients
Crust
- 18 Graham Crackers 2 Packs of a 3 Pack Box
- 1 Cube of Butter Melted
- Crumble fine and packed into 10” Spring Mold Pan
- Bake for 10 Minutes at 375 Degrees
Filling
- Blend eggs sugar, cheese, lemon, salt slowly until creamy and smooth, then add vanilla and pour into prepared crust.
- 1 – 8 oz Packs of cream cheese
- 5 – Eggs
- 1 Lemon Juice
- 1 Lemon Zest
- 1 Cup Sugar
- 1 Teaspoon Vanilla
- Dash of Salt
- Bake at 375 degrees for 20 minutes reduce heat to 350 for 20 minutes, then reduce to 325 for 20 minutes… After 1 hour… Remove from oven (when knife comes out clean) and let cool for 5 minutes.
- Add Topping and Bake at 325 Degrees for another 20 Minutes.
Topping
- 16 Ounces of Sour Cream
- 2 Tablespoons Sugar
- ½ — Teaspoon Vanilla
Instructions
- ** For best results, do not eat for 8 hours**
