Easy Organic Scrambled Eggs With Spinach Mushroom And Feta
Organic eggs, organic mushrooms, organic spinach, organic shallots, Valbrezo feta, with a side of herb toast and fruit. Substitute egg whites if you prefer.
Equipment
- 1 Nonstick pan
- 1 small mixing bowl
- 1 Sharp knife
- 1 Whisk
- 1 Spatula rubber
Ingredients
- 1/4 tsp avocado oil
- 1 clove organic shallot chopped very fine
- 4 caps organic baby bella mushrooms sliced
- 4 large organic eggs or egg whites only (2 per person)
- 1 cup organic baby spinach no stems
- 1/2 oz Valbrezo feta more if desired
- 1/4 tsp Himalayan sea salt and Fresh cracked Pepper to taste
Instructions
- In a small bowl, add the eggs and a 1/2 teaspoon of water or almond milk. Whisk vigorously until frothy. Add a touch of S & P.
- Turn the skillet to medium, and add the oil until it heats up.
- Add the shallots and cook for one minute.
- Add the mushrooms to the pan and cook for about 3 to 4 minutes until the mushrooms become soft.
- Add in the spinach, salt, and pepper lightly. Stir until the spinach starts to wilt.
- Remove the spinach and mushrooms from the pan and set aside.
- Add the egg mixture to the pan, rest for 10 seconds, stir gently, and then add the spinach and mushroom ingredients back. Fold together gently. (You may want to add a teaspoon-sized amount of cheese inside).
- Remove from heat, plate, and top with a dollop of feta cheese.
