Easy Organic Scrambled Eggs With Spinach Mushroom And Feta

Equipment

  • 1 Nonstick pan
  • 1 small mixing bowl
  • 1 Sharp knife
  • 1 Whisk
  • 1 Spatula rubber

Ingredients
  

  • 1/4 tsp avocado oil
  • 1 clove organic shallot chopped very fine
  • 4 caps organic baby bella mushrooms sliced
  • 4 large organic eggs or egg whites only (2 per person)
  • 1 cup organic baby spinach no stems
  • 1/2 oz Valbrezo feta more if desired
  • 1/4 tsp Himalayan sea salt and Fresh cracked Pepper to taste

Instructions
 

  • In a small bowl, add the eggs and a 1/2 teaspoon of water or almond milk. Whisk vigorously until frothy. Add a touch of S & P.
  • Turn the skillet to medium, and add the oil until it heats up.
  • Add the shallots and cook for one minute.
  • Add the mushrooms to the pan and cook for about 3 to 4 minutes until the mushrooms become soft.
  • Add in the spinach, salt, and pepper lightly. Stir until the spinach starts to wilt.
  • Remove the spinach and mushrooms from the pan and set aside.
  • Add the egg mixture to the pan, rest for 10 seconds, stir gently, and then add the spinach and mushroom ingredients back. Fold together gently. (You may want to add a teaspoon-sized amount of cheese inside).
  • Remove from heat, plate, and top with a dollop of feta cheese.
