A refreshing and light, easy to prepare classic Italian salad and one of my favorites: if you love Arugula and I do, you love lemon, and I do, you love parmesan, and I do – then, in less than five minutes, you can create this delicious, sophisticated salad which pairs beautifully with many dishes.

One of my favorite salads: if you love Arugula and I do, you love lemon, and I do, you love parmesan, and I do – then, in less than five minutes, you can create this delicious, sophisticated salad which pairs beautifully with many dishes.
Equipment
- Sharp pairing knife
- Salad bowl & Tongs
- Salad shaker
- Mortar & Pestle or Pepper Grinder
Ingredients
Salad
- 4-5 oz. arugula lettuce fresh, cleaned
- good aged parmesan – shaved, to taste approx. 2 tbsp
Dressing
- 1/4 cup olive oil (very good quality California brand is good
- 1/8 juiced organic lemon (an organic lemon is jucier approx. 1/8 cup
- Hymilayan sea salt to taste approx. 1/6 tsp
- Fresh cracked or pestled pepper to taste approx. 1/2 tsp or less
Instructions
Salad
- Put cleaned Arugula in a salad bowl. Shave pieces of fresh, high-quality aged parmesan cheese on top. Sprinkle with a touch of fresh ground pepper. Refrigerate 30 minutes
Dressing
- Add the olive oil, S&P, Lemon juice into a salad dressing shaker. Shake until the lemon and oil emulsify (approx. 40 shakes). Taste to make sure it has a slight tang, but the flavor is balanced. Refrigerate 30 minutes – with plates and forks
Serving
- Shake dressing again and drizzle on salad, toss. Less is more to start – the dressing will become thinner as it warms up – you do not want soggy lettuce
Notes
This arugula salad is sometimes served with carpaccio and fresh sourdough bread as an appetizer at Italian restaurants, and it’s to die for! Is it easy to do if you have a gourmet market that sells carpaccio nearby? Whole Foods might also sell carpaccio.
