Ultimate Burrito Supreme: Chicken, Cheese, Bean, Guacamole, Sour Cream

Super delicious and easy to make, this hearty snack can rival any restaurant's burrito! Feel free to add to or swap out the chicken with your favorite protein, such as shrimp, steak, sausage, bacon, or eggs, to suit your taste.

Equipment

  • Skillet
  • Small pot
  • Sharp Kniffe
  • Tongs
  • Cheese grater

Ingredients
  

  • 2 large flour tortillas
  • 1 pat butter spread on one side of the tortillas to aid browning
  • 1/4 cup cheese I like monteray jack and cheddar
  • 1/2 can vegetarian refried beans (or black beans) I add a bit of water to thin
  • 4-6 slices chicken I like to use organic rotisserie
  • 1 cup guacamole (see recipe below)
  • 1 tbsp sour cream
  • 1 dashes hot sauce if desired

Guacamole

  • 1 avocado smashed chunky
  • 1 tomato choppped med fine
  • 1 tbsp pickled jalapenos chop fine
  • 1/2 lime juice
  • 1 pinch S&P
  • 1 pinch garlic powder
  • 1 pinch onion powder

Instructions
 

  • Make the guacamole, and refrigerate it to cool while you continue.
  • Grate the cheese.
  • Begin heating the beans on medium-low.
  • Use a fork to shred your favorite part of the chicken.
  • Butter the tortillas and cook in a skillet on med-low, with buttered side down.
  • Put cheese on the tortilla, cover to help it melt faster, then add warm refried beans and chicken before removing from the heat.
  • Add the guacamole and sour cream. Wrap, folding the bottom first, then each side.
  • Top with hot sauce if desired.
  • Serve immediately!
