The Most Amazing, Crispy Onion Rings

Light and crispy onion rings. This recipe is simple and delicious. The onion rings come out very crunchy and light.

Equipment

  • Large Cast iron Skillet
  • 2 Bowls
  • Cookie sheet
  • Tongs

Ingredients
  

  • 1-2 Large onions yellow or white

Dip

  • ¾ cup Flour
  • ¼ cup Cornstarch
  • ½ tsp Cayenne pepper
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • 1 cup Cold water

Coating

  • 1 cup Panko bread crumbs

Frying

  • Vegetable oil fill the pan about 2" - I use almost an entire 24 oz. bottle of vegitable oil.

Instructions
 

  • In a medium bowl, combine the dry ingredients (flour, cornstarch, cayenne, S&P)
  • Slowly pour in the cup of cold water, whisk, and mix well
  • In another large bowl, pour the panko bread crumbs
  • Slice the onion into ¼ inch slices and separate the rings
  • Dip rings three times in the sauce, then into panko and onto a large plate or baking sheet
  • Heat the vegetable oil in a cast iron skillet to 350 degrees or medium heat (as you add rings, the oil should bubble)
  • Work in batches - dropping rings into the oil, turning once or twice until golden. Approx. 1-2 minutes
  • Remove and place on a paper towel or rack until finished
  • Stack on a plate, salt lightly, and serve right away with catsup or dipping sauce

Notes

This recipe is simple and delicious. The onion rings come out very crunchy and light.
And don't underestimate the power of Panko - it's lower in calories, fat, and sodium than regular breadcrumbs. The flakes are more defined and less dense, adding to the lightness of your dish.
