Rich and Healthy Avocado Bagel
Smashed avocado on a toasted 'everything' bagel is incredibly satisfying. You can enhance the flavor by adding red onion, tomato, and a squeeze of lime juice. - 2 bagels sliced in half
- 1 large avocado smashed
- 1 slice red onion chop fine - if desired
- 1 wedge lime juiced on avocado
- 1 small tomato if desired - cut fine (no seeds)
- 1 pinch salt and pepper
- 1 tsp Jalapeños if desired - fresh or pickled (chopped fine)
Cut the bagels in half and place in the toaster.
You can make the avocado ahead of time if you want to add more ingredients and let the flavors meld in the fridge for a few minutes. Alternatively, you can simply smash the avocado on the bagel, add a pinch of salt and lime, and you're done.
Enjoy on its own or with fruit, eggs, juice, or coffee.
