Gilly's Great Burrito: Bean, Cheese, Bacon, Guacamole, Sour Cream
Super yummy and simple to make; this hearty snack will give restaurant burritos a run for their money!

Cheese grater
- 2 large flour tortillas
- 1 pat butter spread on one side of the tortillas to aid browning
- 1/4 cup cheese grated. I like monteray jack and cheddar
- 1/2 can vegetarian refried beans (or black beans) heated (I add a bit of water to thin)
- 4-6 slices bacon cook until crisp, cut into med pieces
- 1 cup guacamole (see recipe below)
- 1 tbsp sour cream
Guacamole
- 1 avocado smashed chunky
- 1 tomato choppped med fine
- 1 tbsp pickled jalapenos chop fine
- 1/2 lime juice
- 1 pinch S&P
- 1 pinch garlic powder
- 1 pinch onion powder
Make the guacamole and refrigerate to cool
Grate the cheese
Begin heating the beans on med-low
Cook the bacon, chop, set aside
Butter the flour tortillas, place in skillet (butter side down) on med-low
Put cheese on the tortilla, cover with a lid to help it melt faster, then add the refried beans when the tortilla is warm and starting to become golden - remove from the heat
Add the bacon, guacamole, and sour cream. Wrap, tucking the bottom first, then each side
Serve immediately!
Of course, you can omit or exchange the bacon with another protein such as shrimp, chicken, steak, or scrambled eggs.
