Prepare this salad with your favorite type of lettuce, sustainable wild-caught albacore tuna, and organic kidney beans. Make this simple Dijon vinaigrette using two or three types of vinegar. 1/2canorganic kidney beans(15 oz can) I like Trader Joe's
1slicered onionIn thin slices, or chopped fine
1pinchS&P
1squeezelemon to finish- if desired
Dressing
1/6cupgood olive oilextra virgin
1/6cupvinegarI like using 2 or 3 kinds, IE, red wine, white wine, apple cider, balsamic, champagne, etc.
1/2tspdijon mustard
1pinchS&P
Instructions
Add tuna to a large bowl of lettuce
Add the rinsed kidney beans and thinly sliced red onion
Sprinkle on top with fresh ground pepper
Let chill in the refrigerator for 30 minutes
Toss with dressing, and serve at once
