Energy Boosting Tuna Salad With Kidney Beans and Dijon Vinaigrette

I prepare this salad with different types of lettuce, sustainable wild-caught albacore tuna, organic kidney beans. A simple dijon vinaigrette using two or three kinds of vinegar: I enjoy apple cider, red wine, and balsamic with dijon mustard, S&P. Shake well and refrigerate 45 minutes, et voila!

Salad bowl & Tongs
- 4 oz dark leaf lettuce (or 1 head of romaine)
- 1 can wild caught, albacore tuna
- 1/2 can organic kidney beans (15 oz can)
- 1 slice red onion, chopped fine - if desired
- 1 pinch S&P
- 1 squeeze lemon to finish - if desired
Dressing
- 1/6 cup good olive oil extra virgin
- 1/6 cup vinegar I like using 2 or 3 kinds, IE: red wine, apple cider, balsamic, champagne etc.
- 1/2 tsp dijon mustard
- 1 pinch S&P
Add tuna to a large bowl of lettuce
Add the rinsed kidney beans and thinly sliced red onion
Sprinkle on top with fresh ground pepper
Let chill in the refrigerator for 30 minutes
Toss with dressing, and serve at once
I first ate this wonderful salad at a little French cafe on Larchmont, a quaint tree-lined street near Paramount Studios in Los Angeles. The salad is refreshingly light yet hearty. Perfect if you are on a diet or after a workout. It is an excellent meal to fuel muscle growth because it's packed with lean protein. I swear, when I eat this salad, it boosts my mood, and I feel like Popeye after he eats spinach!
