Crispy and Amazing Baked Potato Wedges With 3 Aioli Sauces

These crispy wedges are a perfect side dish for almost any meal, always mouth-watering and delicious, made yummier still with organic catsup or one of my three aioli sauces: Roasted garlic aioli, sriracha aioli, or avocado aioli. These recipes for Aioli include vegan ingredient choices.

Potatoes
- 4 medium baking potatoes
- 1/8 cup olive oil
- 1/8 cup parmesan cheese grated very fine
- 1/2 tsp garlic powder or 2 cloves fresh pressed garlic
- 1/2 tsp smoked paprika
- 1 tsp sea salt
- 1/4 tsp fresh cracked pepper
Garnish
- 1 tbsp fresh chopped parsley rough chop
Roasted Garlic Aioli
- 2 heads garlic *see roasting directions below
- 1/2 cup organic mayonnaise or vegenaise
- 1 tbsp lemon juice
- 1/4 tsp paprika or lime juice
- 1 pinch sea salt (to taste)
- 1 pinch fresh cracked pepper (to taste)
Sriracha Aioli
- 1/2 cup organic mayonnaise or vegenaise
- 1 tbsp sriracha chili sauce
- 1/4 tsp cayenne pepper
- 1/2 tsp paprika
- 1 pinch sea salt
Avacado Aioli
- 1/6 cup organic mayonnaise or vagenaise
- 1 small haas avocado mashed
- 1 tbsp lemon or lime juice
- 1 clove garlic (to taste) pressed or finely chopped
- 1 pinch sea salt
Potato Marinade
In a small bowl combine, olive oil, paprika, garlic or garlic powder, S&P
Keep grated parmesan to the side
Potatoes
Wash and dry 4 potatoes, slice each in quarters and then into wedges, lengthwise
Brush each wedge lightly with the marinade, place on the baking sheet and sprinkle liberally with parmesan
Place in 400 degree oven for 30-40 minutes, turning once or twice
Roast the Garlic
Peel off excess outer skin of the bulbs, slice the top off so raw garlic is visable, drizzle or brush with olive oil and a pinch of S&P
Wrap in foil
Place in oven at 400 degrees for 35-40 minutes
Remove garlic from oven and let cool, squeeze warm into the mayonnaise (or vegenaise) for the Garlic Aioli recipe
NOTE: If you choose to make the roasted garlic aioli sauce, you will notice that the oven temperature and cook times are equivalent to the potato wedges recipe, making things very easy.
